Advice on wheel buying

Looking to spend £500-700 on either a new set of road wheels or a mountain bike. Have done a bit of searching for mountain bikes so I'm now looking for some advice on buying wheels.

I ride in Sheffield for 8 ish months of the year so I'm looking for a wheelset that is good in the hills
but also appropriate for the riding around Ashwell.

I currently have Bontrager Affinity disc which weigh over 2.1kg for the pair so I think most wheelsets would be an upgrade in that sense.

Have spoken to a few of you on the club rides already but I'm starting to notice that everyone recommends the wheels they are riding!

Any recommendations/advice on rim depth, material or specific brands/models would be much appreciated. Thanks in advance.

I'm very pleased with my new Hunt wheels (apart from the noisy freehub which everyone complains about!). They do several carbon disc wheelsets for £699 (see https://www.huntbikewheels.com/collections/road-cx-disc-brake-wheels?_=pf&pf_t_material=Carbon). You're also buying British.

Thanks Nat... Was set on a mountain bike but I'm not convinced my freehub is gonna last much longer so figured now might be a good time to upgrade my wheels instead. Still definitely got my eyes out for mountain bikes as well though
